In Villié-Morgon, the Passot-Collonge estate brings together two winemaking families who have been present since the 19th century. Jean-Guillaume now works with his parents on 9.5 hectares spread across six appellations. Each plot is vinified separately, revealing the diversity of the terroirs.

The estate has been practicing sustainable viticulture since 1992, and is now Terra Vitis and High Environmental Value certified. Soil cultivation, treatment control, and vineyard observation guide the process. Small-volume vinification combines long macerations, partial destemming, and punching down. The wines are aged in vats for nearly a year before bottling. The diversity of the wines and vintages allows for a variety of profiles, suited to different tasting moments.
