Harvesting is done by hand, with meticulous sorting. The vines are carefully tended, including practices aimed at minimizing treatments. Vinification combines long fermentations and barrel aging, with a controlled proportion of new oak, to express the terroir and ensure consistent quality from one vintage to the next
